  1. Put onions, garlic, celery, green pepper, mushrooms and courgettes (zucchini) in a large sauce pan and mix together.
  2. Add kidney beans, tomatoes, passata, tomato puree, and tomato ketchup.
  3. Add the spices, season with salt and pepper and mix well.
  4. Cover then bring to a boil. Simmer for 30 minutes, stirring occasionally until the vegetables are just tender. Serve immediately with natural yogurt, sprinkled with cayenne pepper. Garnish with fresh cilantro sprigs.
