This is a well-loved recipe in my family.
Ingredients
- 2 Onions chopped
- 1 clove garlic crushed
- 3 sticks celery chopped
- 1 green pepper seeded and diced
- 3 cups mushrooms sliced
- 2 courgettes (zuchhini) sliced
- 14 oz red kidney beans if in a can rinse and drain water
- 14 oz chopped tomatoes canned
- 2/3 cup passata
- 2 tbsp Tomato Puree
- 1 tbsp tomato ketchup
- 1 tsp hot chilli powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- salt and pepper to taste
- natural yogurt to serve
- cayenne pepper to serve
- sprigs fresh cilantro to garnish

Instructions
- Put onions, garlic, celery, green pepper, mushrooms and courgettes (zucchini) in a large sauce pan and mix together.
- Add kidney beans, tomatoes, passata, tomato puree, and tomato ketchup.
- Add the spices, season with salt and pepper and mix well.
- Cover then bring to a boil. Simmer for 30 minutes, stirring occasionally until the vegetables are just tender. Serve immediately with natural yogurt, sprinkled with cayenne pepper. Garnish with fresh cilantro sprigs.
