Ratatouille
A classic French vegetable stew that is hearty and delicious. The recipe is from an awesome vegetarian cookbook I have called 330 Vegetarian Recipes for Health edited by Nicola Graimes. It’s awesome, go get yourself a copy!

  1. Sprinkle the aubergines and courgettes with salt and put them in a colander with a plate and weight on top. This will extract the bitter juices. Leave for 30 mins.
  2. Heat the olive oil in a large saucepan. Add onions and fry gently for 6 – 7 mins until softened. Add garlic and cook for another 2 mins.
  3. Rinse aubergines and courgettes and pat dry with a clean towel. Add to pan with red and yellow peppers. Increase heat and saute until peppers are just turning brown.
  4. Add herbs and coriander seeds then cover pan and cook gently for 40 mins.
  5. Add tomatoes and season with salt and pepper. Cook gently for another 10 mins until vegetables are soft but not mushy. Remove the sprigs of rosemary and thyme. Stir in torn basil leaves and check seasoning. Leave to cool slightly and serve warm or cold, garnished with sprigs of parsley or basil.
