This recipe is great for when you have vegan guests coming over for dinner!
Ingredients
- 1 cup quinoa
- 1 cucumber diced
- 1 orange or red pepper diced
- 1 package grape tomatoes
- 1/4 cup Extra Virgin Olive Oil estimate based on amount of salad
- 1/4 cup balsamic vinegar estimate based on amount of salad
- salt and pepper to taste

Instructions
- Cook 1 cup of quinoa in 2 cups of water for about 15 mins until all the water is absorbed and a translucent ring appears on the quinoa. Fluff with a fork and cool.
- Cut up and diced the veggies and put into a large bowl.
- Combine ingredients for the dressing in a separate small bowl and whisk. Optional ingredients for the dressing include maple syrup, prepared mustard or honey mustard if you like.
- Once cooled, add the quinoa to the veggies and pour the dressing on top. MIx well and chill in the fridge before serving.
