This is a great easy cake to make and a fantastic way to hide veggies for picky eaters.
Ingredients
- 2 cups All Purpose Flour
- 2 cups White Sugar I use cane sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp Baking Soda
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1 tsp ground cinanmon
- 4 eggs
- 1 1/2 cup Vegetable Oil I use olive oil
- 3 cups Zucchini grated
- 3/4 cup Walnuts chopped

Instructions
- Preheat oven to 350 F (175 C)
- Grease and flour a cake pan. Tip: I use cocoa powder instead of flour
- In a mixing bowl sift together flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon.
- Add eggs and oil, mix well.
- Fold in nuts and zucchini and mix until evenly distributed. Pour into prepared cake pan.
- Bake for 60 minutes. Cool cake completely and frost (I powder the cake with a little icing sugar).
