This is one of my favourite cookie recipes to make. It turns out well every time and it uses lots of oats! (We get lots of oats on our grain CSA. 😉 )

Ingredients
- 1 Cup Butter Softened
- 1 Cup Light Brown Sugar
- 1/2 Cup White Sugar
- 2 Tsp vanilla
- 1 1/4 Cup flour Mix and match! Use at least half all purpose flour
- 1/2 Tsp Baking Soda
- 1/2 Tsp Salt
- 3 Cups rolled oats
- 1 Cup Nuts Or craisins/raisins
- 1 Cup Chocolate Chips
Servings: Dozen
Instructions
- Preheat oven to 325F
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla
- Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended
- Mix in the oats, nuts, and chocolate chips
- Drop by spoonfuls onto ungreased baking sheets
- Bake for about 12 minutes. They will not look done! Cool before transferring to a rack or container
Recipe Notes
Add spices such as cinnamon and cardamom for extra kick.
This recipe freezes extremely well. Roll into a "log" and place in the freezer (we use beeswax cotton but you can use parchment paper to wrap). You can then have cookies on the table when unexpected guests show up!
