I replicated an apple cake that my aunt showed me how to make using the recipe from this food blogger.  It turned out moist and delicious and goes well with a caramel sauce on top.    I modified both recipes slightly from the original and they turned out well.  Not bad for a first try!

  1. Preheat oven to 350 degrees. Prepare cake pan by brushing with some oil.
  2. Sift flour, cinnamon, baking soda and salt in a bowl.
  3. In the bowl of an electric mixer combine vegetable oil, sugar, and eggs; mix on high speed until lemon yellow.
  4. Gradually add dry ingredients to the mixer.
  5. Add apples and nuts (if desired), mix to combine. Add vanilla and mix.
  6. Pour batter into prepared pan and bake for 75 minutes or until a cake tester comes out clean.
  7. Remove from oven and let cool on a wire rack.
  8. To make the caramel sauce combine brown sugar, whipping cream, butter and salt in a saucepan and heat over medium-low heat. Whisk for 5 - 7 minutes until it thickens. Add vanilla and cook another minute. Turn off heat and cool slightly and pour overtop the cooled cake.
