I replicated an apple cake that my aunt showed me how to make using the recipe from this food blogger. Â It turned out moist and delicious and goes well with a caramel sauce on top. Â Â I modified both recipes slightly from the original and they turned out well. Â Not bad for a first try!
Ingredients
- 1 1/3 cups Vegetable Oil
- 3 cups All Purpose Flour
- 1 tbsp Ground cinnamon
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 cups sugar
- 3 large eggs
- 3-4 large Apples peeled, cored and cut into 1/2 inch pieces, should make about 3 cups or more
- 1 cup chopped assorted nuts I omitted this
- 1 tsp vanilla extract
- 1 cup packed brown sugar
- 1/2 cup whipping cream or half and half
- 4 tbsp Butter
- 1 pinch Salt
- 1 tbsp vanilla extract

Instructions
- Preheat oven to 350 degrees. Prepare cake pan by brushing with some oil.
- Sift flour, cinnamon, baking soda and salt in a bowl.
- In the bowl of an electric mixer combine vegetable oil, sugar, and eggs; mix on high speed until lemon yellow.
- Gradually add dry ingredients to the mixer.
- Add apples and nuts (if desired), mix to combine. Add vanilla and mix.
- Pour batter into prepared pan and bake for 75 minutes or until a cake tester comes out clean.
- Remove from oven and let cool on a wire rack.
- To make the caramel sauce combine brown sugar, whipping cream, butter and salt in a saucepan and heat over medium-low heat. Whisk for 5 - 7 minutes until it thickens. Add vanilla and cook another minute. Turn off heat and cool slightly and pour overtop the cooled cake.
